Ingredients

2 cups unbleached all-purpose flour, sifted

1 teaspoon salt

1/2 teaspoon baking soda

2 eggs, separated

1 3/4 cups buttermilk

4 tablespoons melted unsalted butter (slightly cooled)

Butter and maple syrup for serving

Directions

1) Preheat your waffle iron.

2) Sift the baking soda, salt, and flour together in a medium bowl.

3) Beat the egg yolks together in a large bowl. Add in buttermilk and beat together.

4) Add the flour mixture to the wet ingredients mixture, and mix only to blend. Do NOT overmix!

5) Stir in the melted butter to the mixture.

6) In a separate bowl, beat the egg whites until stiff (not dry). Fold egg whites in waffle mixture and mix – but do not blend completely.

7) Follow the manufacturer’s instructions for cooking waffles from your waffle iron. Spoon a cup of batter on a hot waffle iron. Add more batter as needed. Cook the waffles until they are a golden brown color on the outside and soft on the inside.

8) Serve the fluffy buttermilk waffles with butter and maple syrup.

Tips for Making the Best Buttermilk Waffle Recipe

  • Experiment with different temperatures on your waffle iron to get the best waffles. You want the right amount of crispiness on the outside without drying out the waffles.
