I learned to make this fun and tasty sauce a few years back while taking a 16 week culinary course with Chef Eric, one of the most fun experiences I've had in the culinary world so far!

WHAT IS HOLLANDAISE SAUCE?

Hollandaise sauce, a classic french sauce typically made with butter, egg yolks, lemon juice and vinegar. Hollandaise sauce is seasoned with various ingredients like salt, pepper, cayenne pepper and in my recipe, hot sauce!

Typically prepared using the "double boiler" method by placing a bowl over a heated pot, this technique helps to control the temperature of the eggs during the cooking process.

There's several ways to prepare this sauce but today, we will discuss this sauce using the double boiler method.

HOLLANDAISE SAUCE USES

This rich, creamy but delicate sauce can be served over poached eggs.

Pour this tasty sauce over poached eggs, burgers, breakfast toast, breakfast bowls, fresh steamed vegetables and much more! Depending on how creative you get, this sauce truly has no limits!

HOLLANDAISE SAUCE INGREDIENTS

In this recipe, I use the staple traditional ingredients used from the classic french technique. Always wanting to add a twist, you'll notice a "new" ingredient being added that I suggest you do not omit.

HERE'S WHAT YOU'LL NEED TO MAKE HOLLANDAISE SAUCE:

  • 3 Egg Yolks
  • ½ cup Salted Butter (1 stick)
  • 1 teaspoon White Vinegar
  • Fresh Lemon Juice (1 tbsp)
  • Pinch of Cayenne Pepper (¼ tsp)
  • Dash of Hot Sauce (optional)
  • Salt (and pepper if desired)

TOOLS NEEDED TO MAKE EASY FROM SCRATCH HOLLANDAISE SAUCE

It's important to realize this cooking method is best achieved by prepping your ingredients and identifying all kitchen tools needed. Grab these items before the cooking process begins for best results.

  • Small to medium saucepan (pot)
  • Heat proof bowl (to be used as the double boiler, will need to fit inside and on top of the sauce pot)
  • Durable kitchen towel
  • Whisk
  • Glass Measuring Cup or heatproof bowl (for the melted butter)
  • 3-4 Small Bowls (to place measured ingredients in)

HOW TO MAKE HOLLANDAISE SAUCE

Now the fun part begins and I don't use that term lightly! Preparing hollandaise sauce can seem intimidating, I'm excited to share that it's not dashing as it seems.

Follow these steps closely and carefully and you should have a perfectly creamy, buttery and rich sauce every time!

It is important to note to prep all of the ingredients first before preparing the sauce.

  • Boil water in the pot being for the double boiler.
  • Separate egg yolks from egg whites and place in a small bowl.
  • Squeeze fresh lemon juice and place in a bowl.
  • Measure and pour white vinegar in a small bowl.
  • Gather seasonings such as salt, pepper, cayenne pepper and hot sauce.
  • Dice butter into small chunks.

FIRST, MELT THE BUTTER FOR THE FROM SCRATCH HOLLANDAISE SAUCE

  1. Begin by placing small dice chunks of butter in a small pan over medium heat. Use a spatula or heat proof tool to begin stirring the butter as it melts.
    1. Heating the butter with this method allows the butter to rise to the appropriate temperature level.

NEXT, ADD THE EGG YOLKS AND BUTTER

  1. At this point, place the egg yolks into the heatproof bowl that the sauce will be prepared in.
  2. Place the bowl over the heated pot with water and begin whisking vigorously.
    1. Equally important to note at this step to grab a kitchen towel during the cooking process as it will get hot.
  3. Slowly add in the melted butter one tablespoon at a time and whisk combining the ingredients.
  4. At this step, please note you will remove the bowl off of the hot pot every 20-30 seconds being careful not to over cook (or curdle) the eggs.
  5. Repeat steps three and four until all the butter has been added and the sauce has reached your desired consistency.

NOW ADD THE SEASONINGS TO THE HOLLANDAISE SAUCE

At this step, you should have a smooth and buttery sauce. Continue to place the bowl over the heated pot and whisk every 20-30 seconds to maintain the consistency of the sauce.

As you continue to stir the sauce, add in each seasoning one-at a-time.

  1. Add in vinegar and whisk vigorously over the heat.
  2. Pour in the fresh lemon juice and whisk.
  3. Sprinkle cayenne pepper into the sauce and whisk until combined.
  4. Season with salt (and pepper if desired) and whisk.

TASTE TEST THE EASY FROM SCRATCH HOLLANDAISE SAUCE

By the time you reach this step, the sauce should be complete. Use a spoon to scoop a small amount of the sauce and taste for flavor, texture and consistency.

  1. Add more lemon juice and salt if the sauce tastes a little bland.
  2. If the sauce tastes too vinegary, add more butter and whisk over heat.
  3. If you'd like more spice or heat, add cayenne pepper or hot sauce.

THE EASY FROM SCRATCH HOLLANDAISE SAUCE IS COMPLETE!

Now the Easy From Scratch Hollandaise Sauce with Recipe Video is complete. This is about a ten to fifteen minute process depending on your skillset and speed. Pour the completed sauce into a sauce bowl and serve over your favorite breakfast, brunch or desired dish.

HOW TO THICKEN HOLLANDAISE SAUCE

Depending on factors such as hot butter, the whisking method during cooking time, the sauce may become runny or even too thick. Here are a few tips to keep in mind.

  1. If the sauce is thin place the bowl with sauce back over the heated pot and add more melted butter pouring in one tablespoon at a time until desired thickness is reached.
  2. If the sauce is too thick, add hot water (can use the boiling water from the pot) beginning with one tablespoon to the sauce and whisk until desired consistency is reached.

CAN HOLLANDAISE SAUCE BE STORED AND REHEATED?

The Easy From Scratch Hollandaise Sauce with Recipe Video is best served fresh and does not store well or reheated. However, follow these tips for best usage.

  1. Short-term storage is best. Make the sauce ahead of time (a few hours) and store in an airtight container. Allow the sauce to completely cool before placing in the refrigerator. The sauce can last for a few days with this method.
    1. To reheat, place the bowl in the microwave adding in 1 teaspoon of butter and water and heat in 30 second intervals until the sauce is warm and desired consistency is reached.
